43. Willibald Farm Distillery & Kitchen 1271 Reidsville Rd., Ayr, www.drinkwillibald.com @drinkwillibald, Built 2017, Design: Stonecrest Engineering, OPEN noon – 5 p.m. Come for a guided tour of the distilling operation at this first generation farm distillery, producing progressive grain-to-glass spirits with bold flavours. Willibald opened in 2017 in a converted century barn with the rustic character of a seasoned agricultural space and the modern amenities required for distillation. Located just outside of Ayr on a beautiful 100-acre former dairy farm, which also grows rye grain, lavender, and produce, raises heritage cattle, and runs a 28 beehive apiary for honey and pollination. The excellent quality water that supplies the distilling operation is drawn on site from a deep aquifer, and helps create spirits unique to the region. A true farm-to-table restaurant was added in 2018 to make the most of the farm’s agricultural production, and to showcase sustainability in agriculture, seasonality in food, and the spirits they produce.
